On the night of Thursday, July 12th, I went to a spectacular restaurant called Pair. I started by ordering my usual special drink of a Limonade. When I tried to order it, I was informed they were making their own Limonades. I tried it and loved it. It was a nice unexpected surprise! For dinner, we ordered the special, which was a smoked trout rillette, which is an ancient French dish commonly served with bread. It’s like a spread that is very rich. We also had some baby vegetables (carrots, potatoes, and snap peas), brisket sliders (addicting once you try them), pork belly, and pommes frites with aioli. For dessert, I had coffee pot de creme. Delicious! My favorite thing was the brisket sliders but it was fun trying new things.
I got to meet Chef Kym of Pair and Frank’s a couple months ago. She is a great chef and I was even lucky enough to interview her for a report at school. I think her cooking is as great as her personality.
