Yesterday it was boiling hot outside and my mom and I were craving this cold cucumber salad that you can get at Din Tai Fung, which is a great dumpling restaurant. As always I was quick to say,”we can make that!” The salad at Din Tai Fung is spicy because it has chili oil (I always add a little extra). We were going to make chili oil but we didn’t have the proper ingredients and we were too lazy to get them ourselves so we had to find a different cucumber salad recipe. The recipe we did find turned out to be great. I thinly sliced two cups worth of Japanese cucumbers. Then I salted them. I added soy sauce, rice wine vinegar, sesame oil, sesame seeds, and sugar. After mixing them all together I let them marinate for twenty minutes. Then I ate them. Perfect on a hot day!
