Alex Guarnarschelli’s Chilled Cucumber Soup

It was a scorching night and I was too hot to cook so I made chilled cucumber soup. I was flipping through Alex Guarnashchelli’s new book Old School Comfort Food and I saw a soup that required no stove so I gave it a shot. I sliced some cucumbers, put them in a blender and seasoned with salt pepper paprika and honey! Then I made her fiery yogurt sauce to go with. DELICIOUS! I loved the kick from the paprika, the tang from the cucumber, and the sweetness from the honey. The best soup I’ve ever had!
